A rigorous selection process makes it possible to allocate each grape to a precise vat in order to bring out the potential of our various terroirs and varieties: Grenache Noir, Carignan, Mouvèdre, Syrah.

For one month, depending on the desired type of wine, pumping-over or punching-down processes are performed on a daily basis to ensure optimal maceration.
Our Collioure red
The maturation of Collioure red is conducted for at least 18 months in 15 hl casks to enable micro-oxygenation. This makes it possible to create keeping wines without adding a woody flavour.
